Prepare the Mashed Potato Topping
- Boil the peeled and halved potatoes in a large pot of water for about 30 minutes or until fork-tender.
- Drain the potatoes, then mash them thoroughly.
- Add the melted vegan butter, and season with salt and black pepper to taste. Set aside.

Prepare the Filling
- Preheat the oven to 218°C (425°F).
- In a medium saucepan over medium heat, heat the avocado oil. Sauté the diced onion and minced garlic until softened and golden brown, about 5 minutes.
- Stir in the grated ginger and tomato paste, cooking for an additional 1 minute.
- Add the lentils, vegetable stock, thyme, oregano, and any additional seasonings.
- Bring the mixture to a low boil, then cover and reduce the heat to a simmer. Let it cook for 15 minutes until the lentils are tender and flavors meld.
- Add in the mushrooms, peas, and any other vegetables. Continue cooking until vegetables are softened. For a thicker filling, stir in 2 tablespoons of cornstarch and mix well.

Assemble and Bake the Shepherd’s Pie
- Lightly grease an oven-safe baking dish with a little oil.
- Transfer the filling mixture to the prepared baking dish, spreading it out evenly.
- Carefully spread the mashed potatoes over the filling, smoothing the top with a spoon. Season with a pinch of salt and black pepper.
- Place the baking dish on a baking sheet to catch any overflow. Bake in the preheated oven for 20 minutes, or until the top is golden and bubbly.

Cool and Serve
Let the dish cool for about 10 minutes before serving, as it will thicken slightly as it cools.
